Most Moon Garou would consider an adventurer's version of dune-smoking to be a pale imitation of the true process. 'Real' dune-smoking involves burying a raw desert sole deep within a dune, preferably a couple of metres down. Inside the dune, it alternately cooks and cools with the Scorch and cold nights. The sand helps to delay the rotting process, but - I am slightly debatably told by Moon Garou chefs - that a little bit of rotting never hurt anyone.
